I’m not dissing on potatoes, but let’s face it. . . potatoes have a high glycemic load, and a low nutrient per calorie ratio. Potatoes are low in fiber.
Try mashed broccoli and cauliflower instead. Two things to know:
1. Chop the broccoli up good before cooking to release the enzyme that activates the sulforaphane and let sit for 40 minutes.
2. Steaming is the preferred method of cooking. (5 to 7 minutes. )
There are many tasty toppings you can put on this stuff: lemon juice and garlic, hot sauce, nutritional yeast. A homemade black bean patty, homemade sauerkraut, horseradish, and mashed broccoli and cauliflower, make for an incredible meal of superfoods. God bless and good health. X
