Apple Chestnut Stuffing: Roasted Butternut Squash: Gravy:
1 tbsp olive oil
1 shallot, finely chopped
1 tsp dried sage
3 cups cremini mushrooms, sliced
1/4 cup white wine
1 tbsp apple cider vinegar
2 cups low-sodium chicken or vegetable broth
1 tbsp arrow root flour
3 tbsp water
1 tbsp organic unsalted butter
Salt and pepper to taste
