Today I’m sharing what I ate on this day and sharing the nutritional breakdown of what I ate. I eat a Whole Foods plant based vegan diet primarily, but I do not restrict myself of anything, if I want it I eat (always vegan of course).

PB&J OATS RECIPE

INGREDIENTS:
1 cup dry oats
2 cups liquid (I used 1 cup toasted coconut almond milk and 1 cup water)
1/2 mashed banana
1 tbsp pb powder
1 tsp vanilla extract
1 small shredded zucchini (optional)
cinnamon (optional)
ginger (optional)

METHOD:
Cook on stove top (stirring occasionally) until creamy and desired consistency. Top with more banana, berries, jelly/jam, and peanut butter.
