This is my go to recipe for lentils and one of my absolute FAVORITES!
Here is what I used:
1 cup dry lentils, rinsed well
1 cup Onions, diced
1 Tbsp Garlic, minced
1-2 Sweet Potatoes (I used 1 Large)
1 Vegetable Bouillon cube (mine is from Sprouts Farmers Market! If you don’t use the same one it’s okay, but the flavor be different)
1 can Fire Roasted Tomatoes OR
1 can Diced Tomatoes with Italian Seasonings
1-2 tsp White Pepper
2-4 cups water (to saute onions, steam potatoes, and to cook lentils. Add more water if you want more of a soupy consistency)
Feel to substitute ingredients and modify to your liking. This is just a quick and easy recipe I love to prepare in bulk and it is protein packed, filling, and delicious !
