Today, I’m sharing a recipe for roasted bell peppers stuffed with teriyaki quinoa. This easy vegan dinner recipe will delight your tastebuds!
Despite looking fancy, this recipe is pretty darn easy. I’m convinced even the least experienced cooks can make it! You can even enjoy the quinoa on it’s own if you’re for time.
– 1 cup of low sodium vegetable broth
– 1/2 cup of quinoa
– 1 cup chopped carrots
– 1 cup chopped celery
– 1 1/2 cup chopped cremini mushrooms
– 1/4 cup chopped green onions
– 1/4 cup teriyaki sauce
– 4-5 red bell peppers (will depend on size)
Roast in the oven until peppers are soft and starting to brown on the top usually about 50mins to an hour and 5 mins.
