I love eating fish and I need the nutrition of eggs and greens so I put them all together in this simple 1 pan dish. I have it with super spicy seasonings but feel to try whatever it is you like. Ghost Chili Grinder:
1 filet – Fish (frozen cod)
2 tbsp – Butter
3 medium – Eggs
2 large handfuls – Mixed Greens

1. Placing the pan over a medium heat melt the butter and then place the fish. Add any particular spices you’d like.
2. Tilt the pan so the butter pools, with a spoon, baste the fish with the hot butter until flaky and cooked through.
3. Take the fish off to rest on a plate. In the same pan fry 3 eggs, cook to liking. Plate the eggs
4. In the same pan add 2 large handfuls of greens. Use the greens to mop up fat left in the pan. cook until wilted then add to the plate. Enjoy.
