I haven’t done a ‘what I eat in a day’ video in a reeeeally long time, and thought it was about time! They always feel way more personal than recipe vids, so I gave a little personal update in the middle there somewhere…

AND the dinner came out amazing, I think my CSA bag (and some time on the ground) has renewed my kitchen creativity… hope you enjoy!

Dinner starts at 11:50: video went way long because I got excited about dinner and filmed the whole thing… let me know if you like that, or if you prefer to keep it shorter, and save the recipes for their own vids 🙂

EASY CHANA MASALA (ish) INGREDIENTS:
1/2 zucchini or onion
1 14oz can chickpeas 1 1/2 cups cooked
1 1/2 cups tomato sauce
1 1/2 tsp curry powder more or less, to your taste
1 tsp ground ginger or 1 Tbsp fresh, grated
1/2 cup fresh cilantro chopped
1/4 tsp sea salt more or less, to your taste
pinch black pepper

SAVORY EGGPLANT CURRY INGREDIENTS:
1 eggplant diced
1 tsp olive oil
1/2 cup coconut milk
1 1/2 tsp curry powder more or less, to your taste
1 tsp paprika smoked
1 Tbsp nutritional yeast optional
pinch sea salt
